Mushroom Rainbow Trout

Clean the mushrooms and chop them into large pieces. Add them to the olive oil heated in a large pan. Sauté over high heat until they release their water and it evaporates. Add the garlic, salt, and black pepper and cook. Transfer the mushrooms to a container to keep warm. Add the olive oil and butter to the same pan. Season the trout fillets with salt and black pepper and add them to the pan. Cook over medium heat for 3-4 minutes. Turn them over and cook for another 2-3 minutes. Return the mushrooms to the pan. Cook together for another 1-2 minutes, then remove from the heat. Serve hot.

  • 2 rainbow trout fillets
  • 400–500 g mushrooms 
  • 2–3 tablespoons olive oil
  • 1 clove garlic 
  • 1 small knob butter
  • Salt
  • Black pepper
