Mediterranean Corvina (Meagre) with Olive Oil and Tomatoes
Heat the olive oil in a pan, sauté the garlic until fragrant. Finely chop the tomatoes and add them, cook until soft. Add the peppers and sauté for a few minutes. Add salt and black pepper, then add the hot water. Place the fish fillets in the sauce. Cook on low heat, covered, for 8–10 minutes. If desired, sprinkle with finely chopped fresh onion or chives and serve hot.
