Mediterranean Corvina (Meagre) with Vegetables
Rinse the Mediterranean corvina (Meagre) fillet thoroughly and set aside to drain. In a deep bowl, mix the olive oil, vegetable oil, butter, water, red pepper flakes, black pepper, oregano, and half a teaspoon of salt. Place the Mediterranean corvina (Meagre) on a baking tray. Arrange the potatoes, onions, and tomatoes around it. Pour the sauce evenly over the tray. Cover the tray with greaseproof paper and bake in a preheated 200°C oven for 1 hour. After baking, remove the greaseproof paper and continue baking until the top is golden brown. Serve hot.
