Oven-Baked Sea Bass Skewers
Cut the cleaned sea bass fillets into approximately 2.5 cm pieces. In a large bowl, combine the fish pieces with lemon juice, grated lemon zest, olive oil, salt, black pepper, and thyme. Cover with plastic wrap and marinate in the refrigerator for at least 20 minutes. Cut the peppers and onion into square pieces proportional to the fish. Optionally, lightly coat the vegetables with olive oil. If using bamboo skewers, soak them in water for 10 minutes before cooking. Thread the skewers alternately with fish, pepper, and onion, repeating in an orderly sequence if desired. Cook on a preheated grill or in a 200°C oven for 10–12 minutes, until the fish is lightly colored. Turn the skewers halfway through cooking for even cooking. Serve the fish skewers hot, preferably with arugula salad, lemon slices, and an olive oil-based sauce.
