Pesto-Marinated Sea Bass Starter
Place the basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil into a food processor. Add a little salt and blend until the mixture becomes smooth and reaches a pourable sauce consistency. Cut the sea bass fillets into pieces three fingers wide. Heat the olive oil in a pan. Lightly coat the fish with flour and place into the hot oil. Cook for 2 minutes, turn over, and add 2-3 tablespoons of pesto sauce to the pan. Gently shake the pan to spread the sauce evenly. Cook for another 2-3 minutes, then remove the fish from the pan. Put it on a serving plate, drizzle with pesto sauce, and garnish with basil leaves and cherry tomato slices before serving.
