Sea Bass with Orange
Cut the sea bass fillets into pieces approximately two fingers wide. Wash one of the oranges thoroughly and slice into thin rounds. Prepare a bowl of boiling water and blanch the orange slices for 4–5 minutes, then remove and place on paper towels. Zest the other orange and squeeze its juice. Melt the butter in a wide pan and bring the freshly squeezed orange juice to a boil. Once the juice has reduced slightly, add the sea bass fillets and cook for 3 minutes. Add the orange slices and cook together for another 2 minutes. Add the cream and bring to a brief boil, then sprinkle with salt and remove from heat. Transfer the orange sea bass to serving plates, spoon over the sauce, and serve with freshly ground black pepper.
