Vegetable Sauteed Fish
Peel the onion, tomatoes, and garlic and chop them finely. Slice the peppers into rings and cut the fish fillets into cubed pieces. Heat the vegetable oil in a deep sauté pan and add the onion, garlic, and peppers. Sprinkle with salt and sauté over high heat. Add the chopped tomatoes and continue sautéing. Add the fish pieces together with the bay leaves and sauté by shaking the pan over high heat. Cook for 5-6 minutes. Sprinkle with chopped parsley and black pepper, remove from the heat. Serve hot.
